The History of Food Part IV: Globalization & Industrialization

This lectures analyzes the excellerating pace of population growth, nation states, trade between continents (the spice trade), conquest, colonialization. Starting with the fall of Roman Empire into the Renaissance, the various food related events that have shaped our world. An example is the Columbian Exchange describing the introduction of plants from the Americas into Europe and the reciprocal introduction of European animals and plants into the Americas. Using the slave trade as a starting point, this period of history is also refered to as modernity with global markets, disposession of peasants from the land, the mechanization of labor, the first factories and a revolution in food ways, with new crops and new ways of farming. Migration, population growth, urbanization all intensify.
